Many a time we find ourselves disappointed with the erratic gustatory stimulation provided by the "kopitiams". In response, Caffeinated's "Kopi Peng" was developed as a suitable alternative to their "kopitiam's" counterpart. Our Kopi Peng is cold-brewed for 10 hours and sweetened with sugared water. The resultant concentrate is then cut with cold whole milk, thus producing a sweet, creamy and piquant brew that all coffee aficionados can enjoy.
What you need:
Grind one pound of coffee on a coarse setting.
Add the grounds with roasted chicory to the pot.
Pour 2.5 litres of cold water into the pot. Give the mixture a few stirs with a spoon until all the coffee grounds are immersed.
Cover the pot. Let the mixture steep for 13 hours at room temperature.
When the coffee is ready, pour it through a fine metal sieve. It would be a lot easier if you break the coffee crust with a spoon.
Serve it with ice, and add milk and sugar syrup. The coffee to milk ratio should be equal. You should drink it immediately when the milk is introduced.
